GRANA PADANO and PARMIGIANO REGGIANO
Grana Padano is purchased at about 1 month of age and is matured for about 2 years.
Parmigiano Reggiano is purchased at 12 months and is matured for about 30 months.
During the maturing phase (temperature 16/18° and humidity 80/90%) the cheese is cleaned and brushed every 7 days and every month quality control is carried out.
The cheese supply is preceded by thorough research to ensure excellent quality throughout the maturing process.
